Special Veggie Pasta
(With crispy carrot slices)

This is a very simple recipe
Ingredients : |
Any assorted pastas, I used Cannelloni pasta (short cut), Spaghetti and Tufoli. 1 tin of 400g chopped tomatoes A handful of heritage cherry tomatoes A few fresh black olives 1 Carrot 1 pack of closed cup mushrooms 1 Red bell pepper 1/2 a Broccoli A few garlic cloves |
For the sauce
Step 1 - Prepare your vegetables, slice the carrot, pepper, and broccoli together and the mushrooms separately, chop the garlic into thin slices. |

Step 2 - Fry up the carrot, pepper and broccoli in a little oil in a frying pan. |

Step 3 - Add the heritage cherry tomatoes and the garlic slices into the frying pan. |

Step 4 - Heat up the can of chopped tomatoes in a saucepan with the black olives. |

Step 5 - Once the vegetables are soft, mix them into the tomato and olive sauce, keep gently warming them until the pasta is ready. |
For the pasta
Step 1 - Boil up the various pastas in a saucepan and keep them slowly boiling into the pasta goes soft, |
For the crispy carrot slices
Step 1 - Peel a little bit of carrots. |

Step 2 - Fry the carrot slices in olive oil in a frying pan. |
